yummy yummy yummy.....
.....I got coconut cupcakes in my tummy!
These are really good so I decided to post the recipe for all to try!
Let me know if you try them out and what you think!
Coconut Cupcake
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup packed sweetened shredded coconut
6 ounces (1 1/2 sticks) unsalted butter, softened
1 1/3 cups sugar
2 large eggs plus 2 large egg whites
3/4 cup unsweetened coconut milk
1 1/2 teaspoons pure vanilla extract
Seven-Minute Frosting
1 1/3 cups large-flake unsweetened coconut

Seven-Minute Frosting
1 1/3 cups large-flake unsweetened coconut
Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk dry ingredients in a large bowl. Add 1/2 cup sweetend coconut and coat well. Cream butter and sugar with a mixer until light and fluffy. Add eggs, 1 at a time, beating after each addition.
Reduce speed to low. Mix coconut milk and vanilla. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Divide batter among muffin cups, filling each 2/3 full.
Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. Cupcakes will keep, covered, for up to 3 days, unless otherwise noted
Seven Minute Frosting
1 1/2 cups plus 2 tablespoons sugar
2/3 cup water
2 tablespoons light corn syrup
6 large egg whites
2/3 cup water
2 tablespoons light corn syrup

Mix 1 1/2 cups sugar, the water, and corn syrup in a small saucepan over medium heat. Cook, stirring occasionally, until sugar dissolves. Bring to a boil, and cook until mixture registers 230 degrees on a candy thermometer.
Meanwhile, whisk whites with a mixer on medium speed until soft peaks form. With mixer running, add remaining sugar. With mixer on medium-low, pour sugar syrup in a slow, steady stream down side of bowl. Increase speed to medium-high, and whisk until stiff peaks form and mixture is cool, about 7 minutes. Use immediately.
This frosting is like a meringue and piled high on these coconut cupcakes and topped with some toasted coconut it is to die for!

aka- his 26th birthday.
Tomas is such a great guy and I feel very very lucky that
I am married to him. He takes care of my computer when
it gets virusus, he keeps my car kept up and running, and he
can make me laugh easier than anyone else, and almost anytime**.
And he's not too hard on the eyes, either :)
So give it up for Tomas Boren, the man of the day! I hope you have
a wonderful day Tomas!

cruise pictures!
We just got back from our wonderful vacation. We went on a cruise with our friends Colby and Des, and also my parents, Ali, and her friend Elora. We flew to San Juan, Puerto Rico, and spent a day there, and then our cruise took us to St. Thomas, Antigua, Bermuda, and then we ended up in NYC. It was soooo much fun!!! Here is a bunch of pictures. My camera screws up the order, so they aren't chronological, which bugs me, but I don't feel like re-arranging them all. So in no particular order.....

I don't know what to say about this picture. Its pretty random.

This picture is hard to see, but that is Tomas up on stage. We went to a show with a hypnotist, and Tomas didn't go up on stage or anything, but when the hypnotist did his little thing with the people on stage, Tomas got hynotized just sitting in the audience, so they brought him on stage. It was probably the greatest hour of my life. I always thought hypnotists were stupid, but Tomas really would never have done that stuff on his own free will. We got it on video, and I'm going to try to upload it later. It was sooooo hilarious. Best memory of the whole vacation!

Mike was able to join us in San Juan. This is at dinner. Mike was our San Juan tour guide. He got the car and picked us up at the airport and pretty much rocked those crazy San Juan roads. We love you Mikey B!
